In our house, there is always something to celebrate!
With 4 children and grandparents nearby, there is always a birthday, holiday or special occasion in the works. And, we gather every Sunday as an extended family with grandparents to enjoy dinner and a special homemade dessert from grandma. Opportunities to dabble in new dessert recipes are never in short supply.
However, with a busy household, I definitely gravitate toward mixes that I can tweak slightly in design to make my own. I had so much fun designing and putting together this colorful celebration cake that could be the centerpiece at literally any special occasion.
I started with the vanilla cake mix from Miss Jones Baking Company. After mixing the ingredients together, I chose to bake my cake in 6” round pans versus a more traditional 8-9 inch pan size.
After allowing my cakes to cool completely in their pans, I flipped them out onto cooling racks. Note: if you attempt to flip cakes onto cooling racks when they are still warm, they often stick!
I used a cake leveling tool to slice my 2 cakes into 4, thin even layers. Then, I started to assemble my celebration cake onto my pink milk glass pedestal. I placed one layer onto the center of my cake stand; then spread a layer of confetti icing on top, repeating this process until I had used each of my 4 cake layers. I added additional confetti icing to the top of my cake, smoothing with a rubber spatula.
For added whimsy and color, I added these handmade yarn pom poms with hand-painted stick bases to the top of my cake. I absolutely love toppers like this as they not only add a fun design element, but they can be easily cleaned and used again and again at future celebrations.
