One of our family’s go-to dinners during summertime is a burger bar. A variety of topping choices, deliciously grilled burgers and complementary sides make for the perfect one-sized fits all dinner. Sophisticated Fare- Meatball Tomato Salad
Not all summertime fare involves burger bars and barbeque spreads! I know in my house, all of us love to try new recipes, and among our summer dinner ideas is a fresh salad. Meatball Salad
Ingredients
- Pure Farmland Homestyle Plant-Based Meatballs
- 4c Mixed Spring Greens
- Heirloom Tomatoes, sliced
- ¼c Greek Yogurt
- 1 tbsp Chives, chopped
- 1 tsp Lemon Zest
- 2 Tbsp Lemon Juice
- 3 Tbsp Oil
- Salt
- Pepper
Directions
- Cook the Pure Farmland Homestyle Plant-Based Meatballs as Directed.
- Whisk together the lemon juice, 3 TBSP of oil, ½ tsp salt and ½ tsp pepper in a small bowl. In a separate bowl, combine yogurt, 1 tbsp water, chives and lemon zest.
- Add a handful of meatballs atop your mixed spring greens on a plate.
- Drizzle your yogurt mixture to finish.
