Dishes highlighting vibrant colors are just perfect for warm summer months! One of our favorite past times during warmer months is grilling. This colorful peach salsa recipe is perfect to top grilled pork loin, grilled steak, grilled chicken or grilled salmon. Actually, it is SO good, it’s even amazing served solo as a dip. Summer Peach Salsa Recipe
Ingredients Needed
- Diced Red Pepper
- Chopped Peaches (fresh or canned)
- Diced Cilantro
- Diced Red Onions
- Diced Jalapeno (include to taste)
- Fresh Limes
Directions
Remove the ends of the jalapeno, then dice finely. For a mild flavored peach salsa, remove the membrane and seeds. For a little kick, leave them intact!
Remove the membrane and seeds of your red pepper, or seasonal mini sweet peppers which we find in Texas grocers, then dice finely. Mini sweet peppers are often available in red, orange and yellow coloring, which is ideal for this peach recipe!
Red onions offer amazing color and make the perfect addition to our summer peach salsa. Dice finely.
Now it’s time to work with those delicious peaches! If using canned peaches (which are a perfectly wonderful option if peaches are not in season), reserving some of the juice, then rough chop. The juice makes a nice addition to the salsa right before serving! Fresh peaches are wonderful when they are in season! So, be sure to grab them if they are available!
Rough chop fresh cilantro to use as a garnish. Or, if you are like me and not a cilantro lover, the dish is still wonderful without this ingredient!!
Slice a fresh lime to add much needed acidity to this dish. For convenience, you can also use lime juice available at your grocer, which I almost always have on hand in the condiment section of my refrigerator.
Add equal parts diced red pepper, chopped peaches, and diced red onions into a small bowl. Add diced jalapenos to taste; we mixed in about ½ of the other vegetable portions for a milder family-friendly flavor, but maybe you’re braver than we are! Add the reserved juices from your canned peaches, squeeze ½ of a fresh lime into the dish, and gently combine. Garnish with diced cilantro. If you are looking for an extra kick, add a dash of chili powder just before serving.
We gave this recipe a try with grilled pork loin, and everyone in our family absolutely loved it! But as a bonus, it is also an amazing stand-alone dip for tortilla chips. And, I love a recipe that can play double duty!!
