Our house is FULL of egg salad fans! So, this little smoked egg salad sandwich appetizer recipe is a bit hit in our household during the holiday season (or any time for that matter). My secret to reducing preparation time on these beautiful little appetizers is the addition of Great Day Farms Hard Boiled Eggs from Walmart. Smoked Egg Salad Sandwich Appetizers
Ingredients:
- 8 Hard-Boiled Eggs from Great Day Farms
- 3 tbsp mayonnaise
- 2 tbsp buttermilk
- 2 tsp hot sauce
- 1-2 tsp liquid smoke
- 1/2 tsp salt
- 8 slices pumpernickel bread, crusts removed and cut into small rectangles
- Dill for garnish
- Ground pepper
Instructions
- Dice the hard boiled eggs and add to a medium mixing bowl.
- Add the mayonnaise, buttermilk, hot sauce, liquid smoke and salt to the hard boiled eggs, and gently mix until combined.
- Spoon the smoked egg salad mixture onto pre-cut sliced of pumpernickle bread.
- Garnish with ground pepper and fresh dill.
- Serve immediately.

Creating Smoked Flavor: Liquid Smoke vs. Applewood Wood Chips
What is liquid smoke? This liquid is created by condensing smoke from burning wood. It’s a great way to add smoke flavor to a recipe without using a smoker or wood chips. This flavor profile can also be created on a stove top with just a few household items. Instead of adding liquid smoke to the egg salad recipe above, you can create your own smoked flavor using a broiler pan, stovetop and wood chips. To begin, separate the hard boiled egg whites from the egg yolks. Add the egg whites onto the rack of a broiler pan filled with applewood indoor wood chips. Partially cover the broiler pan with heavy duty aluminum foil, then place the pan onto a stove top over medium-high heat. Once you see a small wisp of smoke, cover the pan tightly and remove it from the heat. After 2-4 minutes, remove the hard boiled egg whites from the pan, add them to a mixing bowl, and resume the recipe instructions above. Both smoking options offer a depth of flavor to this egg salad recipe, so get creative and try them both!
