Quick Preparation Tips
Even though this recipe is fairly quick to prepare, there are a few things that you can do to reduce preparation time. The first, is to prepare your fruit in advance. Clean, chop and dice during the brownie baking time.
Our next tip, is to allow the cream cheese to rest on the kitchen countertop while you prepare and bake your brownie mix. It should be at room temperature when the brownie has finished cooling, ready to create your sweetened cream cheese frosting. And finally, if you want a ‘perfectly round’ brownie pizza, bake it on a baking stone on parchment, then use a larger cake pan mold to create an ideal round shape, similar to how you would use a cookie cutter. Cut out your circle shape from the cooked brownie, before adding your sweetened cream cheese icing. The best part of trimming the cookie brownie pizza, is the delicious crunchy brownie edges that you can enjoy all by yourself.
Brownie Fruit Pizza Variations
One of my favorite things about this recipe, beyond its simplicity, is how easy it is to vary the toppings. We chose to showcase fresh strawberries, kiwis and blueberries in this version, but I have found success using a number of other toppings.
Here are some of my favorite topping alternatives:
- Raspberries
- Blackberries
- Banana (dipped in lemon juice to prevent browning)
- Crushed Pineapple (canned and drained, or chopped fresh)
- Diced nuts (i.e. walnuts or pecans)
- Mini chocolate chips
- Chocolate drizzle
Choose your favorite toppings to create a one of a kind brownie fruit pizza. When decorating this dessert, you can use a free-form style like shown, or work from the center outwards creating rows of a single fruit. Both options are impressive, and really lend to your preference of style.
Tip: Prepare your fruit and then refrigerate until you are about to serve versus decorating your brownie pizza, then refrigerating. Some fruit holds liquid, and that liquid if allowed to sit on your cooked brownie pizza could cause sogginess.
